Hello, I have been baking for a couple of years now and have visited from time to time and don't think I have posted before but get forgetful!  I am a home baker who likes baking sourdoughs and rye breads in particular but will have a go at making most breads if I can.   At the moment I am thinking about trying to make malt loaf like Soreen and have been reading the posts where people have been trying to work out a formula for doing it.  I thought I would have a go at Dougal's version...which I found in a post here so  I'll let you know how it goes.   I don't even really like it that much, it kind of sticks to your teeth, but I am on a quest now......  Zeb

We share the same excellent taste in breads: sourdough and rye.

Hi Zeb!  I'm just over the bridge from you.  I don't like Soreen either, but you can always invite friends over for coffee and make them eat it and compliment you on your awesome baking skills!  ;-)  Hope you are enjoying the forum, I have found it invaluable since discovering it a few months ago.

Thanks for the warm welcome!  I have two loaves that I just pulled out of the oven. No 1 looks like a collapsed yorkshire pudding, my rendition of trying to guess the secret Soreen recipe , No 2  a proud looking baking powder raised malted fruit loaf with a glug of Guiness in it from a Dan Lepard recipe. Both are cooling in their tins.  I will take some pics and let you know what they are like later on.  No 1 has had everything thrown in it, diax, nut brown flour, tapioca flour, molasses, barley malt, and I have my doubts somehow.  I confess I haven't eaten Soreen for about 15 years, but once eaten, it's unforgettable, that special trying to scrape it off your teeth feeling....  Yes, my plan is to give this away if it is edible! It was a baking request from a friend.  As they look now No 2 is winning by a mile!

I love looking at any baking photos, I'm addicted to them!  =)  Very interested to see pics when you get them up.  Hope your friend enjoys the fruits of your labour.

I posted the results of malt loaf experiments no 1 on a forum post called maltbread update, there are some pics there too if you want to see them.... not sure if that's the right way to do this, but I didn't want to start a new post as there were so many here already on the subject.  But if you like pics here is a crumb shot of the last sourdough miche I made all the best Zeb
