Hello, New here, love it!!

Hi My name is Karen, I operate a small bakery out of my home in West Virginia.  I started my bakery as a cookie company, but I also do a lot of breads.  My specialty is Salt Rising Bread, I can say that I have finally completely mastered it, and will post a blog about it soon.  I have just started teaching small baking classes.  I'm so happy to find this sight, lots of great info!

Salt rising bread is very popular in my area but the bread that I get anymore isn't quite like I remember as a kid. It doesn't have the strong smell when you toast like I remember years ago and the flavor doesn't seem to be quite the same. That is why I really want to learn to make it to see if I can get it to taste like I remember from childhood.

It has the smell alright!!  The problem with a lot of salt rising bakers is that they try and skip steps, or stretch the starter too far.  I've had people buy this bread and ship it to family, one lady even bought 6 loaves while she was here on vacation, and had to buy an extra suitcase to bring her bread home.  What area are you from?

Welcome to the neighborhood! I hope you'll share that recipe soon. King Arthur Flour once carried a product to help bake that bread but that has been a while. I'm looking foward to your contribution to knowledge banked here at TFL.
