Holy Oven Spring Batman!

Chocolate Sourdough - take 2

I don't know if you can tell by this picture, but I got quite the oven spring out of my chocolate sourdough this time.  The loaf just split in two,the guts of which bulged out.  So, I am guessing I need to work on my slashing technique.  It was really yummy and crumb was great, but I kinda laughed when I pulled it out of the oven.  I did steam  the oven this time right from the beginning, whereas I forgot to the first time I made this recipe.

Yes I know you all envy my bread saw.  Wish I could find them again.  I got it 14 years ago at the Park City arts festival in Utah.

My friend and I went to the same Park City Art Fest in 1997.  She bought a bread saw just like that (plain wood color though).  Never asked how she liked it.  I used a electric slicer because it's less work for me.  I am lazy!  LOL Lovely loaves!  Al

Hey thanks, they did turn out yummy.  On the bread saw...I even got a left handed one for my husband, it cuts such straight thin slices.  Never tried an electric slicer.

I used Shiao-Ping's sourdough recipe that she adapted.  I haven't ever posted a link on TFL, and am finding it a little challenging, but if you do a search for it, you will find it.

Her directions are great and both times I have made it, it turned out great.

I recently posted this bread also. Loved it!

Wondering if you baked your loaves the same time as Shiao-Ping suggests. I found I had to bake them longer. Did you happen to check the internal temp?

Yes, I did it the same amount of time.  I suppose it could have gone for slightly longer, but my "doughy bread sensitive" children didn't mention anything about it being underdone.

Your bread looks delicious.

You can still obtain such knives from Amazon, etc.

Breadtopia.com has one for $24 + $2.75 shipping. Even left and right handed models. Without the psychedelic paint job though.
