Just a couple loaves so I don't have to by store bought. Plain 20% Whole Wheat and a Calamata Loaf.

The plain is for me really, with a spot of Jam fits my coffee just right.

Lunch was antipasti for the sainted wife and myself.

So the Sainted wife's co-workers wanted Baguettes, but since my Baguette molds are too big for my baking stone I decided to make "mini" Baguettes or Stecca's so they would fit in my DO. Along with a Batard and and a Boule. They are Sourdough with a poolish containing 20% Whole Wheat.

The Sweet Stuff

 

I am not much a proper pastry baker but I had a request from my Wifes workmates for some sweet morning breads so I decided to give it a go.

Cracking on with the dough….

Rolled out one half of the dough and laid out the Blueberries, Toasted Almonds and Lemon Zest…...

Rolled it up and proofed overnight…...

Rolled the secong dough with White and Red Rasins, Dried Tart Cherries, Brown Sugar, and Toasted Walnuts.

The next morning (4:30am mind you) I pull them out and let them warm and proof wile I make the Maple-Caramel Drizzle for the finished lot.

Everything out of the oven and ready to plate

Drizzle and box up to be driven over to the Wife's work place

As far as I can tell they enjoyed everything, but I was knackered by 8pm that day.

Now that my new starter is up and running and my wife work mates are requesting more bread I baked again.

20% Whole Wheat Sourdough with Pumpkin Seeds

20% Whole Wheat Sourdough (for me)….

and 20% Whole Wheat Sourdough with Sundried Tomatoes and Pecorino Cheese

Sorry Folks I have been super busy and I let my starter die by mistake. I am still trying to get caught up on all the posts, sorry if I didn't comment.

Anyway, I have a new starter now and this was the first bake from it, one a classic Sourdough, one brushed with Arugala-Basil Pesto, and a Boule.
