Today's breads - 6/21/09: Italian SD Rolls & Cinnamon-Raisin-Walnut Bread from BBA

The rolls I made with the Sourdough Italian Bread  dough were so good, I made a bigger batch today. I thought about making them larger than last time, but my wife said she wanted hers smaller. So, I made half of them 4 oz and half 3 oz. I guess you could call them "His and Hers Sourdough Italian Rolls."

 

One of our favorite breads is the Cinnamon-Raisin-Walnut Bread from Reinhart's "The Bread Baker's Apprentice." I don't know why I don't bake it more often. Just "so many breads, so little time," I guess. Anyway, my wife has been lobbying for me to make it for a few weeks. So ...

Your Cinnamon-Raisin-Walnut Bread is spectacular!  The way your loaf turned out is so refreshing and inspiring to me.  So often these are dense (like mine!).

I love "His and Hers Sourdough Italian Rolls" too.  What a great way to make every body happy at the same time.  I bet it's no trouble for you to make two sizes.

You have solid techniques whereas I just play with combinations, coloring and dough formations.  I have no patience.  There is a lot I need to learn...in bread making.

Your "his and hers Italian rolls" look terrific, David. I just make the "his" size and Jim finishes off what ever I can't eat!

I haven't tried the BBA Cinnamon Raisin Walnut bread yet but your loaf looks so yummy, I'll have to put it on my list. It's crust looks very thin and delicate. Great!

Reminds me of when I asked a French exchange student who we had living with us many years ago if they ever made pain perdu. Etienne said they never had any left over bread. Whatever was left from the baguette per person they usually had with dinner, his father finished.

And, by the way, we met Etienne's parents a few years later in Paris. Both were very slender. Take that, Dr. Atkins!

It all comes down to calories taken in, doesn't it!?! Portion control must be what the French have going to them.

David, you can tell a lot of love went into the great looking 'His and Hers Italian Rolls'!  I like the different shapes and the sesame seeds add such a nice compliment of flavor to rolls and I know your crumb looks great!  I bet there were some big smiles around your home on Father's Day!  

The 'BBA Cinnamon Raisin Walnut' bread is absolutely gorgeous!  The crumb is fantastic and so nicely formed with the ring of cinnamon...the topping of the cinnamon sugar on the crust really adds such a nice sweetness and looks so good on these types of breads it just makes you lick your fingers!

Everything looks fantastic. I've made the CW raisin bread 3 times in the last month and have another batch rising right now. It's always been a great recipe for me.

great idea! The cinnamon raisin bread, I can smell it right through the screen, hmm-mmm. That's a dangerous one to have in our house. A loaf like that would disappear in a hurry. Slathered with butter is every bit as good as a cinnamon bun!
