Today I am babysitting my 11-month old granddaughter, Addie. She is full of smiles and toddles everywhere! I took advantage of her first nap this morning to straighten up the aftermath, haha. The second nap this afternoon is more satisfying. I made granola for cereal and yogurt topping. The recipe is from my sister-in-law and has been a staple of our household for many years. I made a loaf of whole wheat bread, too. Not sure how it will turn out, as it has been quite a while since I have baked bread and I fear I have lost my touch. However I can usually eat whatever I bake, so I have faith it will at least be edible. Lastly I am making pizza dough using the pizza primer recipe. In the past I had times of making pizza dough and whole wheat bread on a weekly basis. Then came a season of time when family matters and needs really cut into my creative time allowance. Life has settled down a bit, so I hope to be a frequent baker and look forward to getting back in the swing of things. I enjoy perusing the blogs and forums on this site. The community here has been instrumental in showing me the creative side of baking.

 

Granola

42 oz whole oats

2 Tbls cinnamon

1.5 sticks melted butter (3/4 cup)

3/4 cup honey

Mix together the oats and cinnamon. The stir the melted butter and honey into the oats.  Spread onto 2 jelly roll pans that have been seasoned (butter, olive oil, Pam - your preference). Bake approximately 15 minutes at 350 degrees.

I then add raw walnuts, dried fruit such as raisins, craising, blueberries, etc. Can be adapted to suit your preferences.
